Mindful Baking is a vegan & gluten-free bakery located in Chicago, IL founded by Diane Meija.
Diane Mejia was diagnosed with severe gluten intolerance over 5 years ago. She happened to be finishing up her pastry degree at the time. Rather than throw in the towel, she decided to make the effort to make pastries and baked goods that she could enjoy (without getting sick). Setting out on her quest to make gluten-free baked goods, she also discovered the vibrant gluten-free and vegan communities here in Chi-town. She connected with all kinds of folks, gluten-free, vegan and indifferent who loved her baked goods. So, she decided to put out her sign and see what happened.
